I have adopted 3 times in my adult-hood. Each and every time I have taken 2 from the same litter. I totally agree that 2 together is much better for them. (plus double the pleasure, double the fun) I think I have a cat soul. Every time there are cats around, anywhere I go, they know to come close to me and get a rub. Haha. It's fun.
The first 2 sets were without tails, manx and females. This last set I have are female and with tails. What I have learned from this last set, boy did I miss that tail action from the first 2 sets.
All sets have been very mellow and peaceful, inside/outside cats. Come and go as they wish.
The best thing I think to do for their feeling secure, be available and pay attention to their body language. If something outside frightens them, be available for them to run to you for help.
I once went on a trip with my sister, left kittys with husband for 5 days. Well, they didn't starve but were quite cranky when I got home. It took a whole year for one of the kittys to really warm back up to me. Not doing that again. Hahaha.

My cat/dog and 2 cats dominate me, it seems. This is just my life...hahaha. The husband gets the rest of me. & yes the cat that was distant for a year, is the most close to me and talks to me all the time. I really love cats. The cat/dog is for husband. (sure)
